CAMPO DEL SASSO è un bianco ottenuto dal vitigno Trebbiano Toscano che il barone Ricasoli utilizzava nella miscela del Chianti per ammorbidire la ruvidezza del Sangiovese. In purezza, il Trebbiano, nonostante tutta la sua ruvidità, il suo sapore aspro ed i suoi limiti organolettici, è comunque portatore di quei valori di semplicità e genuinità, piuttosto rari nei vini bianchi, che riusciamo ad ottenere attraverso la coltivazione con metodo biologico e l'aggiunta di bassissime quantità di anidride solforosa .
