Description
L’olio è ottenuto da frutti di piante coltivate in zona DOP (Denominazione di Origine Protetta) “Monti Iblei – Val Tellaro” con metodologia biologica. L’organismo di controllo per il rispetto della normativa delle colture biologiche è “Ecogruppo Italia” di Catania che certifica anche la provenienza del prodotto da piante coltivate con il puntuale rispetto della normativa specifica dopo accurate verifiche ed ispezioni.
Le piante coltivate sono circa 1.500 delle seguenti varietà: Moresca 70%, Tonda Iblea 15%, Nocellara del Belice 7%, Nocellara dell’Etna 7%, Carolea 1%. Il luogo di coltivazione principale (circa 1.200 piante) è nella zona collinare del comune di Noto (SR), frazione di Testa dell’Acqua, contrada Mezzo Gregorio ad una altitudine media di circa 600 mt. slm. Altre piante sono coltivate in territorio di Palazzolo Acreide (SR) e Modica (RG).
Tutte le piante sono irrigate e concimate, mediante fertirrigatore, con fertilizzanti ammessi dalla normativa biologica.
La raccolta avviene quando i frutti sono ancora verdi ma nel momento migliore dell’invaiatura in maniera da garantire una qualità di olio di categoria superiore. Essa viene effettuata manualmente e i frutti avviati al frantoio entro 12 ore dalla raccolta.
La molitura è effettuata con sistemi meccanici a freddo presso frantoi biologici e l’olio viene stoccato in contenitori di acciaio inox in ambiente idoneo per una perfetta conservazione in attesa del confezionamento per la successiva immissione nel mercato.
L’olio appena prodotto ha un gusto mediamente piccante dovuto alla clorofilla presente nelle olive verdi che dopo qualche mese si attenua conservando un sapore di medio fruttato con retrogusto amaro ed un odore caratteristico di particolare gradevolezza che conserva nel tempo.
