Collocato a sud ovest, in un terreno calcareo argilloso, é caratterizzato da una resa volutamente bassa ma di grande qualitá. La vinificazione artigianale ed un affinamento per piú di due anni in botti di rovere, e per sei mesi in bottiglia sono gli elementi che rendono questo grande vino unico per struttura e carattere.

La produzione di questo vino implica di per sé un’alta qualità dell’uva trasformata, ottenuta da un’attenta coltivazione biodinamica del vigneto. L’esperienza di tanti anni ci ha portato a selezionare soltanto uno dei vigneti più vecchi sui 17 ettari presenti. L’uva, raccolta a mano, in piccole casse, è pressata per ottenere un mosto che, una volta pulito, va in fermentazione in vasche di acciaio inox. A 5 gradi alcolici una parte di questo mosto parzialmente fermentato è trasferito in barrique Francesi, dove esaurisce tutti gli zuccheri. Dopo una lenta decantazione statica e l’allontanamento delle fecce più grandi, comincia il periodo di affinamento che si protrae per circa 9 mesi. L’unione di questa quota di vino a quella rimasta in acciaio determina come risultato un vino energico, ma elegante e fresco.

Di questo Gavi non si può parlare veramente di tecnica di produzione perché questo vino è creato fuori, alla luce, dalla natura stessa. Infatti a scolpire questo vino è l’uva biodinamica che cresce in una particolare vigna lavorata solo dai nostri cavalli, dopo un anno segnato da duro lavoro, nel silenzio della natura. Questa vigna, dove la terra è particolarmente soffice e ricca di humus, crea viti speciali che portano a maturazione un frutto resistente, vitale, ricco di sostanze benefiche che danno un particolare sapore e profumo a questo vino. Il lavoro in cantina è particolarmente delicato e di grande responsabilità, volto a non rovinare cosa, meritatamente, ci è regalato. Si accompagna, infatti, il mosto con rispetto e attenzione, in botti di legno Francesi fino all’imbottigliamento dopo il quale esce alla luce da cui è nato per ritornare nel mondo. Per preservare la sua autenticità e genuinità non vengono aggiunti solfiti in nessuna forma.
