La mucca che tutti conosciamo dal manto bianco e nero, originaria dell’Olanda è la più instancabile produttrice di latte da cui deriva il Parmigiano Reggiano nella sua versione “classica”. Servono ben 500 litri di latte per produrre una forma e grazie alle proprietà organolettiche del latte è anche la tipologia più adatta per raggiungere le lunghe stagionature. Grazie alla nostra lavorazione “estrema” anche le più lunghe maturazioni mantengono quell’inconfondibile cremosità e dolcezza che contraddistingue il nostro formaggio. Dopo quattro anni di stagionatura l’aspetto è più compatto e irregolare senza mai perdere la sua caratteristica principale: l’elasticità. Il colore è più intenso e ambrato, al palato il suo sapore risulta più complesso e pungente, rimanda al sapore della nocciola, della noce, della castagna e della mandorla.

La Bruna Alpina si distingue per l’equilibrio tra qualità e quantità del latte prodotto, particolarmente adatto alla caseificazione. Con un patrimonio di circa 750.000 capi, è la seconda razza da latte in Italia in termini di diffusione. Più ricco dal punto di vista nutrizionale, dal sapore dolce e cremoso, definiamo questo tipo di Parmigiano Reggiano, elegante. Essendo il suo latte più denso, per produrre una forma servono 50 litri in più di latte rispetto alla frisona e maggiore è la capacità richiesta al casaro durante la fase di spinatura e di rottura della cagliata. Tutti i prodotti derivanti da questo tipo di latte pregiato vengono tutelati dal Consorzio Valorizzazione Prodotti Razza Bruna di cui facciamo parte. Dalla pasta finemente granulosa e dal colore giallo paglierino all’assaggio il suo sapore è equilibrato, dolce ma allo stesso tempo saporito e rievoca le note del latte fresco. È la stagionatura più versatile, adatta per aggiungere ai propri piatti una nota di delicatezza senza sovrastarne il gusto. Lo consigliamo accompagnato da una buona bollicina di Franciacorta e da una vellutata di pere e aceto balsamico.
